Vegan Spelt Pancakes

Ingredients
- 1 cup soy milk
- 1 tablespoon chia/flax seed & 3 tablespoons hot water
- 2 tablespoon melted butter
- 1 cup spelt flour
- 1 teaspoon sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons water
Steps
- Mix seed & hot water to rest
- Mix egg, butter, milk
- Mix remaining ingredients
- Give 15mins to rise
- Cook on stove on med-high (6), flip when bubbles
Condiments
- Frozen berries simmered on stove
- Hazlenut / Macadamia nut with maple syrup
Tips
- Don't add baking soda for more crepe texture
- Replace portion of flour with nut meal for more protein
